Instant Undhiyu (Valor Papdi Shaak)

Instant Undhiyu is a side dish of Gujarati cuisine. Instant Undhiyu is one pot meal. Instant Undhiyu is also made in less oil. Undhiyu is a very famous popular side dish of Gujarati cuisine and Valor Papdi (flat beans) is main ingredients with fried potato, yam and methi muthia. But my version Instant Undhiyu.

Ingredients:

• 2 cup hand chopped Valor Papdi/Indian flat Green Beans
• 1 cup Potato Cube
• 1 cup Yam/Suran Cube
• ½ cup Green Peas
• 1/4 cup fresh Grated Coconuts
• 1 tsp Ginger Paste
• ¼ cup crushed Green Peas
• 1 tsp Garlic Paste
• 1 tsp Garam Masala
• 1 tsp Red Chili Powder
• ½ tsp Turmeric Powder
• 1 tsp crushed Kasuri Methi (Dry Fenugreek Leaves)
• 1 tsp Sugar (Optional)
• Oil
• Salt
• Pinch of Hing/Asafoetida
• ½ tsp Mustard and Cumin Seeds
• 1 tsp Lemon Juice
• Chopped Coriander

Method:

1. Heat ½ tbsp oil in pressure cooker. Add mustard, cumin seeds. When it crackles add pinch of hing.
2. Now add ginger garlic paste, sauté for few second.
3. Add fresh grated coconut and green peas sauté again for 1-2 minutes. Add gram masala, red chili powder, turmeric and mix well then add Valor Papdi, potato cube, yam cube and green peas.
4. Then add crushed kasuri methi, salt, sugar, 1/2 cup water and mix well.
5. Cover the lid and cook till 2-3 whistle on medium flame.
6. Switch of the flame and allow them to cool.
7. Now open the lid, mix well, garnish with 1tsp lemon juice and chopped coriander.
8. Serve Instant Undhiyu (Serve Valor Papdi Bateta Shaak) with roti, paratha or puri…

    Excellent will definately give this a go. Like fast easy concept in the busy life we lead. Can u provide an easy way to make the muthiya foreign undhiyu? I know takes long but I would like to have that option to make undhiyu. Thanks

    Great recipe. But, have you missed dhania-jeera powder?
    Love paapdi-bateta shaak & paapdi-ringna too.

Cheel Ni Bhaji Or Bathua Kadhi A sour and spicy yo Cheel Ni Bhaji Or Bathua Kadhi
A sour and spicy yogurt base curry is very popular in rural Sabarkantha, Gujarat. Cheel Ni Bhaji is very healthy. Mostly, Cheel Ni Bhaji is eaten with Makki ki roti or whole wheat flour bhakhri during winter season because this leafy veggie grows only in wintertime. It can be made without oil or any tempering, but some people add tempering over cooked curry, it is just by choice. Traditionally, it cooks in a clay pot over a clay stove with slow cooking.

Bathua also known as Cheel Bhaji or Chandan Bathua, it is a leafy vegetable seasonal to winter months. It is a close relative of spinach and prepared almost the same way. This plant is waxier and carries an earthy flavor. Bathua saag, raita and paranthas are some of its preparations. Common names are Chenopodium lamb’s quarters, melde, goosefoot and fat-hen and pigweed.
