Thandai Recipe

Thandai is very easy and quick to make at home. This fresh, homemade Thandai tastes absolutely heavenly. Homemade Thandai is far better than readymade milk powder available in the market. Thandai is a mixture of milk, dry fruits and spices, so it is healthy too.

Thandai is the perfect drink to serve on special days and festive occasions like Holi and Diwali. The aroma of fennel, cardamom, pepper and saffron rise atop the dense flavor of milk, to pamper the senses and refresh the spirit. You can strain the mixture before serving if you want it smooth, but if you like the coarse mouth-feel of ground almonds and poppy seeds, you can enjoy the drink as it is without straining.

Ingredients:

For Thandai Powder
• ½ cup Almonds
• ¼ cup Pistachios
• ½ cup Cashew
• 2-3 tbsp Melon Seeds
• 2-3 tbsp Poppy Seeds
• 10-12 White or Regular Pepper Corns
• 1-2 tsp Cardamom Powder
• 1 tbsp Fennel Seeds
• 2 tbsp Dried Rose Petals

Other Ingredients
• 4 cup Full Fat Milk
• ¼ cup Sugar
• ¼ tsp Nutmeg Powder
• Few Saffron Threads
• 1 tsp Gulkand

Thandai Recipe

Method:

1. Add all powder ingredients into the blender jar, blend it and make a powder. Keep it in an airtight jar.
2. Take a 2 cups milk, add ½ cup of prepared powder, mix it well and soak it for 3-4 hrs.
3. After 3-4 hrs strain the soaked milk thru sieve, press the mixture using a spoon, so all nut extract gets squeezed properly.
4. Now add remaining milk, nutmeg powder, gulkand, sugar and saffron threads. Mix it till all sugar dissolved properly.
5. Thandai drink is ready. Garnish it with saffron threads, rose petals and slivered dry fruits. Serve chilled and enjoy the holi.

Tips:

• You can store the prepared powder into the airtight jar and keep it in the refrigerator up to 3-4 month.
• You can skip the gulkand and use rose water instead of it.
• You can make the drink without straining too.
