Vegan Creamy Mint Chocolate Popsicles

Vegan Creamy Mint Chocolate Popsicles

Vegan Creamy Mint Chocolate Popsicles made from garden fresh mint leaves, nondairy milk and chocolate. This creamy and sweet frozen treat is healthy with fresh green color without adding any food color. If you love creamy texture of frozen treat and minty chocolate flavor, then you should try this before summer is over :).

It is all about popsicles here and it is hard to beat a good homemade version. Once you addicted to make it at home, you will wonder why you ever bought them at store. This popsicle recipe is super easy to make with very few ingredients. Summer is about to end in a few days, but before saying goodbye to summer, enjoy this summery frozen treat the last time.

Vegan Creamy Mint Chocolate Popsicles

Ingredients
• 14 Oz Can Coconut Milk
• ½ cup Fresh Roughly Chopped Mint Leaves
• ½ cup Maple Syrup or Sugar
• 1 tsp Matcha Powder (opt.)
• 1 cup Dark Chocolate Chips

Method
1. Heat the milk with maple syrup in a saucepan. Heat it till about to boil, then switch of the flame. Do not boil the milk.
2. Add mint leaves and keep aside to cool down completely for 30 mins.
3. In a small bowl add matcha powder and 2-3 tbsp of the prepared milk mixture, mix it well till smooth and non-lumpy paste.
4. Add the matcha paste into the prepared milk mixture and mix it well.
5. Strain all the mixture and discard the mint leaves.
6. Now melt the half of chocolate chips into the microwave according to the package instruction. Then add or coat inside the mold using a spoon. You can tilt the sides of mold and coat with melted chocolate, do not coat too much.
7. Once the chocolate coat set little bit, add the prepared strained mixture into each mold and cover it, then insert the popsicle sticks and place it into the freezer to set about 6-7 hours.
8. Once popsicles become hard, remove the mold from the freezer, dip it into the warm water or run thru the tap water and then gently unmold the popsicles.
9. Place the popsicles on parchment paper and then spread the melted chocolate over it using spoon. Once chocolate set well, put it into the plastic or Ziplock bag and immediately freeze all the popsicles to enjoy anytime.
10. Your healthy Vegan Creamy Mint Chocolate Popsicles are ready, enjoy!!

Tips
• If you don’t like matcha powder, then you can skip it.
• If you want the fresh green color but do not want to use matcha, then add ¼ cup of spinach puree for greenish color.

Cheel Ni Bhaji Or Bathua Kadhi A sour and spicy yo Cheel Ni Bhaji Or Bathua Kadhi
A sour and spicy yogurt base curry is very popular in rural Sabarkantha, Gujarat. Cheel Ni Bhaji is very healthy. Mostly, Cheel Ni Bhaji is eaten with Makki ki roti or whole wheat flour bhakhri during winter season because this leafy veggie grows only in wintertime. It can be made without oil or any tempering, but some people add tempering over cooked curry, it is just by choice. Traditionally, it cooks in a clay pot over a clay stove with slow cooking.

Bathua also known as Cheel Bhaji or Chandan Bathua, it is a leafy vegetable seasonal to winter months. It is a close relative of spinach and prepared almost the same way. This plant is waxier and carries an earthy flavor. Bathua saag, raita and paranthas are some of its preparations. Common names are Chenopodium lamb’s quarters, melde, goosefoot and fat-hen and pigweed.
