Atte Ka Halwa, also known as wheat flour halwa, is a classic Indian dessert that brings warmth and comfort with every bite. This simple yet delicious, sweet is made with basic pantry ingredients like whole wheat flour, ghee, sugar, and water, making it an accessible treat for anyone craving something indulgent. Ingredients
  • ½ cup Ghee + 2 -3 tbsp Extra
  • 1 cup Whole Wheat Flour/Atta
  • 1 cup Milk +2 cup Water
  • ¼ tsp Cardamom Powder
  • ¾ cup Sugar
  • 2-3 tbsp Chopped Dried Nuts (Almond-Cashew)
  • 1 tbsp Raisin /Manuka
  • Slivered Pistachios for Garnishing
Instructions
  1. Heat milk and water in a saucepan and set aside.
  2. In a large pan, heat ghee over low-medium flame. Add the wheat flour and roast it until it turns golden brown and becomes aromatic, stirring continuously to avoid burning.
  3. Gradually add the warm milk mixture to the roasted flour, stirring continuously until all the milk evaporates and the mixture becomes soft and smooth.
  4. Add sugar and continue to stir and cook until the halwa starts leaving the sides of the pan. Cover with a lid and let it cook on low flame for about 5 minutes.
  5. Meanwhile, in a small pan, heat a bit of extra ghee. Add the chopped nuts and raisins, and roast until they turn golden brown. Remove from heat and set aside.
  6. Remove the lid from the halwa, then add the roasted nuts mixture and cardamom powder. Mix everything well until combined.
  7. Your Atte Ka Halwa is ready! Garnish with slivered pistachios and serve with puris for an indulgent treat.
Notes
For a slightly grainy texture, use coarse wheat flour instead of fine flour.
Always roast the flour on low to medium flame. Roasting too quickly can burn the flour and affect the flavor.
If you prefer, dissolve the sugar in the milk-water mixture before adding it to the flour. This helps in even sweetness distribution.
You can substitute sugar with jaggery powder or brown sugar for a different depth of flavor.
Adjust the sweetness to your preference by adding more or less sugar or jaggery.
