  • ¼ cup Finely Chopped Coriander Leaves
  • 1 tsp Red Chili Flakes

  • 1 cup Shredded Amul or Mozzarella Cheese
  • ½ cup Green Chutney
  • Butter for Spreading and Roasting
  • Sev, Extra Cheese, and Chaat masala for Garnish
  • Spicy Ketchup and Green chutney for serving
Instructions
  1. In a bowl, mix capsicum, onion, green chilies, coriander leaves, red chili flakes, chaat masala, and salt to prepare the filling.
  2. Take three bread slices. Spread butter one side of each bread slice. Spread green chutney over two buttered slices.
  3. Place spoonful of filling on the chutney-covered slices and top with shredded cheese.
  4. Stack the two slices with filling side up and cover with the third slice, buttered side down.
  5. Apply or brush the butter inside the sandwich mold. Roast the sandwich in a hand toaster or sandwich maker, until crisp and golden on both sides. You can roast sandwich over the hot griddle, pressing with flat spatula, if you don’t have sandwich maker.
  6. Transfer to a plate, crosscut into four triangles, and garnish with butter, shredded cheese, sev, and chaat masala.
  7. Serve hot with spicy ketchup and green chutney.
  8. Make more Ghughra sandwiches using same method and enjoy with cup of tea as a snack or breakfast.
Notes
Use fresh, soft bread for better taste and crispiness.
Roast on medium heat for even cooking and golden crust.
Ensure the filling is evenly spread to avoid spilling while toasting.
For extra flavor, add a pinch of black salt or a squeeze of lemon to the filling.
