Vaghareli Khichdi
Vaghareli Khichdi or Masala Khichdi, is a most comfort food in this world for me. Vaghareli Khichdi is no onion-garlic recipe and one pot meal too. You can have it this Vaghareli Khichdi any day, any season or any time, even it perfect for lazy day.

  • 1 cup Rice
  • ½ cup Mix Lentil [Toor Dal (Pigeon Peas), Moong Dal (split yellow lentil) and Chana Dal (Split Gram Lentil)]
  • ½ cup Peeled and Cubed Potatoes
  • 1 medium sized Carrot Peeled and Chopped
  • ¼ cup Lilva Beans/Green Toor Dana or Frozen Green Peas
  • 1-2 tbsp Peanuts
  • 1-2 tsp Broken Cashew Nuts
  • 2 Dry Red Chili
  • 2 Small Pieces of Cinnamon Stick
  • 3-4 Clove/Luong
  • 1 tsp Ginger-Green Chili Paste
  • 1 tsp Cumin Seeds
  • Pinch of Asafoetida/Hing
  • 1 tsp Red Chili Powder
  • ½ tsp Garam Masala
  • ½ tsp Turmeric Powder
  • Salt
  • 2 tbsp Ghee/Oil
  • Chopped Coriander for Garnishing
  1. Wash and rinse the rice and all dal for 3-4 times, then soak it for ½ hour. 1
  2. Heat Ghee/Oil in the pressor cooker. Add cumin seeds, cinnamon sticks, clove, dry red chilies, pinch of hing and sauté for few seconds. Add ginger-green chili paste, red chili powder and again sauté for few seconds.
  3. Add chopped potatoes, lilva beans, chopped carrot, peanuts and cashew nuts. Mix it well, and stir it for 2 minutes. 2
  4. Add presoaked rice-dal mixture, salt, garam masala, turmeric powder and 3 cup water. Mix it well, cover the lid and cook it for 4-5 whistle. 3
  5. After 4-5 whistle switch of the flame. Let it be cool down. Once it is cool down then remove the lid. Now add chopped coriander, mix well and serve khichdi top with dollop of ghee, sides with curd, papad or pickle.
• You can add cauliflower, onion, brinjal or any other veggies as per your choice.
• You can skip any dal or use only moong dal.
• Cook khichdi on medium flame to avoid burning in bottom.
