Seviyan Kheer (Vermicelli Kheer)
 
 
Seviyan Kheer or Vermicelli Kheer, is a traditional popular Indian dessert. Seviyan Kheer is easy and quick to make. Seviyan kheer made with milk, seviyan, sugar, and flavored cardamom, with sliced almonds and pistachios and you have a delicious dish!

Ingredients
  • 1 cup Broken Seviyan/Vermicelli
  • 500ml/2 ½ cup Whole Milk
  • 1 tbsp Ghee
  • ¼ cup Sugar
  • 1 tbsp Raisin
  • ¼ tsp Cardamom Powder
  • 1-2 Pinch of Saffron threads
  • 2-3 tbsp chopped Dry Fruits (Almonds, Cashew and Pistachios)
Instructions
  1. Soak saffron in 1-2 tbsp milk and keep aside.
  2. Heat ghee in a deep pan. Add broken seviyan and roast it for 2-3 minutes on low flame.
  3. Add chopped dry fruits, raisin and roast it again on low flame for 2 minutes.
  4. Add milk, stir it continuously till milk bring it to boil, then add sugar, again boil it till seviyan cooks properly and milk mixture becomes thicker.
  5. Add cardamom powder, soaked saffron and mix it well, cook it for 1-2 minutes.
  6. Seviyan Kheer or Vermicelli Kheer is ready for serve. Serve it cold or hot as per you choice.
Notes
• Always roast seviyan on low flame to avoid burning.
• Adjust milk quantity for thicker or thinner kheer consistency as per your choice.
• Use whole milk for good result.
