Vaghareli Rotli or Masala Roti in Yogurt
Vaghareli Rotli or Masala Roti in Yogurt, a perfect healthy breakfast. Vaghareli Rotli is very simple, quick and easy to make. Vaghareli Rotli is made from leftover rotis, spices and yogurt. It is South-Gujarat's one of the most common breakfast. Roti means whole wheat flat bread, which is very common in Gujaratis’ menu. Most of Gujarati make roti everyday so leftover too. And Vagareli Rotli is a very popular answer of this leftover which is even taste better than actual roti. It tastes awesome, can also be accompanied with any side dish. Even my kids love it, especially because of yogurt flavor.

  • 4-5 Leftover Rotis/Chapatis
  • ½ cup Yogurt/Curd/Dahi
  • 2 Green Chilies Roughly Chopped
  • 1-2 tbsp Oil
  • ¼ tsp Mustard Seeds
  • ½ tsp Cumin Seeds
  • Pinch of Hing/Asafoetida
  • ¼ tsp Turmeric Powder
  • ¼ tsp Red Chili Powder
  • Salt
  • 4-5 Curry Leaves
  • ¼ cup Chopped Coriander Leaves
  1. Whisk the yogurt in a bowl, add ½ cup of water and make a smooth batter and keep aside.
  2. Cut the leftover rotis into small-small pieces like nacho’s or potato chip’s size and keep aside.
  3. Heat the oil in a deep pan. Add mustard seeds, cumin seeds and a pinch of hing.
  4. Now add chopped green chilies, curry leaves and sauté it for few seconds.
  5. Add the chopped rotis’ pieces in it and sauté it for 2-3 mins on medium flame.
  6. Add the whisked yogurt into the roti mixture. Add salt, turmeric, red chili powder and mix it well and stir it continuously for 2-3 mins till the mixture becomes little bit thick and start boiling. Now switch of the flame.
  7. Vaghareli Rotli is ready, garnish it with chopped coriander leaves, sprinkle a pinch of red chili powder as per your taste.
• You can add minced garlic and chopped onion into the green chili tempered and sauté it till golden brown and then follow the recipe as it is.
