Method
- First take a bowl.
- Add besan, crushed peanuts, 1 tbsp oil, coriander powder, garam masala, lemon juice, salt, sesame seeds, sugar (opt.) and red chili powder in a bowl, mix well and keep aside.
- Now heat 2 tbsp oil in pan, add mustard seeds in hot oil, when mustard seeds crackle, add cumin seeds and hing.
- Now on add chopped baingan, shimla, salt, ¼ tsp turmeric, mix it, then cover it and cook it on low medium flame. Do not overcook, leave it slightly crunchy.
- When veggies are cooked, add prepared besan mixture and cover it for 2 to 3 mins.
- Baingan Shimla Mirch Masala Sabji is ready to serve with roti.
Notes
1. You can add chopped onion or other veggies as per your choice.
