Method
Prepare Sandwich Chutney
- Add Mint Leaves, Coriander Leaves, Ginger, Green Chilis, Chaat Masala, Black Salt, Hing, Salt, Bread Slice pieces, Lime Juice, Ice Cubes, and Chilled Water to a blender jar.
- Blend everything until smooth and thick. The chutney should be spreadable and not too watery.
- Transfer the chutney to a bowl. Your fresh Bombay sandwich chutney is ready.
Prepare Vegetables
- Peel the Boiled Potatoes and Boiled Beetroot.
- Peel Onion and Cucumber if needed. Wash Tomatoes and Bell Pepper.
- Thinly slice Potatoes, Beetroot, Onion, Cucumber, Tomatoes, and Bell Pepper. Arrange all the sliced vegetables on a large plate for easy assembly.
Assemble the Sandwich
- Take 3 Bread Slices for each sandwich. Trim the edges if preferred.
- Spread Melted Butter evenly on one side of all bread slices.
- Apply Green Chutney on 2 bread slices and Tomato Ketchup on 1 bread slice over the buttered side.
- On the first chutney bread slice, arrange slices of Potato, Cucumber, and Beetroot. Sprinkle Chaat Masala on top.
- Place the ketchup bread slice over it with the ketchup side facing up.
- Now layer Onion, Tomato, and Bell Pepper slices on top. Add Shredded Cheese and sprinkle a little more Chaat Masala.
- Cover with the second chutney bread slice with the chutney side facing down.
- At this stage, your Classic Bombay Sandwich is ready to serve as a plain sandwich without grilling. Cut into triangle or rectangle pieces, top with extra Cheese, Chaat Masala, and Nylon Sev if desired, and serve with Green Chutney and Tomato Ketchup.
For Grilled Bombay Sandwich
- If you prefer the grilled version, apply a little Butter on the outer surface of the prepared sandwich.
- Heat a griller or tawa on medium flame and grease lightly with Butter.
- Place the sandwich and grill both sides until golden brown, crisp, and lightly toasted.
- Remove, cut into pieces, and top with extra Shredded Cheese, Chaat Masala, and Nylon Sev if desired.
- Serve hot with Green Chutney and Tomato Ketchup.
Notes
- Always slice vegetables thinly for the best texture and easy layering.
- Use chilled water and ice cubes while making chutney to keep the bright green color fresh.
- Do not make the chutney too thin, otherwise the bread may become soggy.
- Brown bread or white bread both work well, choose according to your preference.
- Adding Nylon Sev and extra Cheese on top gives the perfect Mumbai street style taste.
- You can prepare the chutney in advance and store it in the refrigerator for 2 to 3 days.
- Both plain and grilled versions are delicious, so serve based on your personal preference.
