Method
For Cookies
- Preheat an oven on 180°C or 350°F
- Take a ¼ cup warm water into the small cup, add instant coffee powder and mix it well till dissolve and keep aside.
- Add butter in a bowl, whisk it well, then add powder sugar, vanilla extract and mix it again till light and fluffy.
- Now add flour, corn flour, cocoa powder and mix it well then add the prepared coffee mixture and mix it well till smooth mixture.
- Now fill the smooth mixture into the piping bag with rose tip mold and make the roses on baking sheet.
- Bake the all roses on 180°C or 350°F for 12-15 minutes.
- Remove all cookies on cooling rack and let it them cool down completely.
For Filling
- Add soft butter in a bowl, whisk it well then add powder sugar and mix it well till light and fluffy.
- Add vanilla extract, mix it well and keep into a fridge for ½ hour.
- Now divide it into 2-3 bowls, and add color and different flavor as per your choice.
Process
- Take the cookie, apply 1 tsp the prepared cream on a cookie flat base and place another cookie flat surface on it.
- Follow same process for other cookies.
- keep cookies aside till inside cream become stiff.
- Rose spritz sandwich cookies is ready, serve it or gift it.
Notes
- If cookies dough become very stiff and hard to make rose, then add little more coffee mixture in that and mix it again; if it very soft then add 1-2 tbsp corn flour in the mixture and mix it well.
- You can use readymade white cream frosting for filling, just use different flavor and color for colorful and flavorful filling.
- You can store it into the airtight container up to a week.
