Ingredients
Method
Prepare the Besan Mixture
- In a mixing bowl, add besan, turmeric powder, hing, ajwain, crushed whole peppercorns, salt, and 1 tbsp oil.
- Rub the mixture between your palms until the oil is evenly incorporated into the flour.
Prepare the Papad Kharo Water
- In a separate bowl, add ¼ cup water and papad kharo.
- Mix well until the papad kharo dissolves completely.
Knead the Dough
- Gradually add the papad kharo water to the besan mixture.
- Knead everything well to make a soft, smooth, and pliable dough. Add a little extra water only if needed.
Shape the Fafda
- Divide the prepared dough into small, equal sized balls.
- Place one dough ball on a clean wooden surface.
- Hold one end of the dough with one hand. Using the base of your other palm, drag the dough forward in a straight line to create a long, thin strip.
- Continue stretching gently until the strip reaches your desired length and thickness.
- Use a knife or flat scraper to carefully lift the strip from the surface.
- Transfer it to a plate and repeat the process with the remaining dough.
Deep Fry the Fafda
- Heat oil in a wide frying pan over medium heat.
- Carefully slide the prepared fafda strips into the hot oil in small batches.
- Fry until the strips become crisp and golden, turning them gently so they cook evenly on both sides.
- Remove the fafda with a slotted spoon and place them on a paper towel lined plate to drain excess oil.
- Allow them to cool slightly before serving.
Tips for Making Perfect Fafda
- Knead the dough well: A smooth, pliable dough makes it easier to stretch the fafda without breaking.
- Check the dough consistency: The dough should be soft but firm enough to hold its shape. Add water gradually to avoid making it sticky.
- Practice the shaping technique: Use steady pressure with the base of your palm to create long, even strips. The first few may not look perfect, but the technique becomes easier with practice.
- Dissolve papad kharo completely: This helps distribute it evenly throughout the dough.
- Maintain medium heat: If the oil is too hot, the fafda may brown too quickly. If it is not hot enough, they may absorb excess oil and become greasy.
- Fry in small batches: This allows the fafda to cook evenly without overcrowding the pan.
- Cool completely before storing: Let the fafda cool before transferring them to an airtight container to help maintain their crispness.
