Vaghareli Khichdi

Vaghareli Khichdi or Masala Khichdi, is a most comfort food in this world for me. Vaghareli Khichdi is no onion-garlic recipe and one pot meal too. You can have it this Vaghareli Khichdi any day, any season or any time, even it perfect for lazy day.

Ingredients
  

  • 1 cup Rice
  • ¾ cup Mix Lentil [Toor Dal Moong Dal and Chana Dal or Masoor Dal]
  • 1 Medium Size Potato Peeled and Cubed
  • 1 medium sized Carrot Peeled and Chopped
  • ½ cup Chopped Green Beans opt.
  • ¼ cup Green Peas
  • 1-2 tbsp Peanuts
  • 1-2 tsp Broken Cashew Nuts
  • 2 Dry Red Chili
  • 2 Small Pieces of Cinnamon Stick
  • 3-4 Clove/Luong
  • 1 tsp Grated Ginger
  • 2 Green Chilies Chopped
  • 1 tsp Cumin Seeds
  • Pinch of Asafoetida/Hing
  • 1 tsp Red Chili Powder
  • ½ tsp Garam Masala
  • ½ tsp Turmeric Powder
  • Salt
  • 2 tbsp Ghee/Oil
  • Chopped Coriander for Garnishing

Method
 

  1. Wash and rinse the rice and all dal for 3-4 times, then soak it for ½ hour.
  2. Heat Ghee/Oil in the pressure cooker. Add cumin seeds, cinnamon sticks, clove, dry red chilies, pinch of hing and saut for few seconds. Add ginger, green chili, red chili powder and again saut for few seconds.
  3. Add chopped potatoes, green peas, beans, chopped carrot, peanuts and cashew nuts. Mix it well, and stir it for 2 minutes.
  4. Add pre soaked and strained rice-dal mixture, salt, garam masala, turmeric powder and 3 cup water. Mix it well, cover the lid and cook it for 4-5 whistle.
  5. After 4-5 whistle switch of the flame. Let it be cool down. Once it is cool down then remove the lid. Now add chopped coriander, mix well and serve khichdi top with dollop of ghee, sides with curd, papad or pickle.

Notes

  • You can add cauliflower, onion, brinjal or any other veggies as per your choice.
  • You can skip any dal or use only moong dal.
  • Cook khichdi on medium flame to avoid burning in bottom.
