Whisk the yogurt in a bowl, add ½ cup of water and make a smooth batter and keep aside.
Cut the leftover rotis into small-small pieces like nacho's or potato chip's size and keep aside.
Heat the oil in a deep pan. Add mustard seeds, cumin seeds and a pinch of hing.
Now add chopped green chilies, curry leaves and sautee it for few seconds.
Add the chopped roti's pieces in it and sautee it for 2-3 mins on medium flame.
Add the whisked yogurt into the roti mixture. Add salt, turmeric, red chili powder and mix it well and stir it continuously for 2-3 mins till the mixture becomes little bit thick and start boiling. Now switch of the flame.
Vaghareli Rotli is ready, garnish it with chopped coriander leaves, sprinkle a pinch of red chili powder as per your taste.
