Wash and halve the kumquats and remove the seeds from the fruit, then chop it finely.
Place the chopped kumquats, sugar, and cinnamon stick in ceramic mixing bowl, mix it, cover it and keep aside for 2-3hrs.
Take a sauce pan add kumquats sugar mixture into, then add water and bring to a boil over high heat.
Reduce heat to medium-low and simmer for 15-20 minutes or until the liquid has reduced and thickened, it will thicken more as it cools.
Remove the cinnamon stick, then place in an airtight container and store in a refrigerator. Use within two weeks.
