Pineapple Salsa

Pineapple salsa: A fresh, refreshing, delicious, tropical flavor of combination in one. It can be served with a taco, grilled veggies, as an appetizer, or just with some chips. Summer is all about bright colored foods and flavors and pineapple salsa fits in both.

Ingredients
  

  • 2 cups Chopped Pineapple
  • ½ cup chopped Red Onion
  • ½ cup Chopped Bell Pepper
  • 1 Jalapeno Deseeded and Finely Chopped
  • ½ cup Chopped Cilantro
  • 4-5 Mint Leaves Roughly Chopped opt.
  • 1 Lime Juice
  • ½ tsp Ground Pepper
  • ½ tsp Ground Cumin
  • ½ tsp Salt or As Per Taste
  • ½ cup Pomegranate Arils for Garnishing

Method
 

  1. In a bowl add fresh chopped pineapple pieces, if you are using canned, drain it completely before adding it to the bowl.
  2. Add chopped red onion, chopped bell pepper, chopped jalapeno, mint, and cilantro.
  3. Squeeze lime juice, sprinkle salt, cumin, and pepper over it.
  4. Combine all the ingredients using a spoon or fork and keep it in refrigerator for 3-4 hours.
  5. Remix it with a spoon just before serving so the settled juicy flavor at the bottom of the bowl is mixed.

Notes

  • Use fresh and ripe yellow-golden pineapple for best result.
  • You can keep it in the refrigerator for 3-4 days in an airtight container for later use.
  • If you dont like the mint taste just skip it.
  • You can add other fruits and veggies like mango, strawberry, tomato, etc. if you want.
