This salsa recipe is the perfect recipe for the summertime, it is so easy to make and takes only 10-15 mins to prepare. It is always a crowd-pleaser. For the best result, always use fresh ripe pineapple, if you want to use canned, you can, but fresh really is best.
An easy recipe for pineapple salsa, loaded with plenty of fresh pineapple, red onion, bell pepper, jalapenos, and fresh herbs. It makes the perfect summer recipe. This salsa is so good that I could just sit and eat it out of the bowl. Its really simple and extremely versatile. It should stay good in the refrigerator for 3-4 days, but chances are it won’t last that long! 😉

Ingredients

  • 2 cups Chopped Pineapple
  • ½ cup chopped Red Onion
  • ½ cup Chopped Bell Pepper
  • 1 Jalapeno Deseeded and Finely Chopped
  • ½ cup Chopped Cilantro
  • 4-5 Mint Leaves Roughly Chopped (opt.)
  • 1 Lime Juice
  • ½ tsp Ground Pepper
  • ½ tsp Ground Cumin
  • ½ tsp Salt or As Per Taste
  • ½ cup Pomegranate Arils for Garnishing

Method

1. In a bowl add fresh chopped pineapple pieces, if you are using canned, drain it completely before adding it to the bowl.

2. Add chopped red onion, chopped bell pepper, chopped jalapeno, mint, and cilantro.

3. Squeeze lime juice, sprinkle salt, cumin, and pepper over it.

4. Combine all the ingredients using a spoon or fork and keep it in refrigerator for 3-4 hours.
5. Remix it with a spoon just before serving so the settled juicy flavor at the bottom of the bowl is mixed.

Tips

  • Use fresh and ripe yellow-golden pineapple for best result.
  • You can keep it in the refrigerator for 3-4 days in an airtight container for later use.
  • If you don’t like the mint taste just skip it.
  • You can add other fruits and veggies like mango, strawberry, tomato, etc. if you want.
