Aloo Gobi Matar Rassevali Sabji

Aloo Gobi Matar Rassevali Sabji (Potato Cauliflower Green Peas thin Gravy Curry) is perfect side dish. Aloo Gobi Matar Rassevali Sabji goes well with any rice dishes or Indian flat bread. This Delightful vegetarian curry made with Potato-Cauliflower-Green Peas.

Ingredients:

• 2 cup Cauliflower Floret (Gobi)
• 1 cup Potato (Peeled and Cubed)
• 1 cup Green Peas
• 1 Tomato chopped
• 1 tsp Garam Masala
• 1 tsp Red Chili Powder
• 2 tsp Kasoori Methi/Dry Fenugreek Leaves
• ½ tsp Turmeric
• ½ tsp Cumin Seeds
• ½ tsp Mustard Seeds
• Pinch of Hing/Asafetida
• Salt
• Oil
• Chopped Coriander Leaves to garnish

Method:

1. Heat 1 tbsp oil in deep pan; add mustard seeds, cumin seeds and pinch of hing.
2. When seeds are crackles, add chopped tomato and stir fry till become soft then add cauliflower florets, potato cubes and green peas and mix well.
3. Now add turmeric powder, salt, red chili powder and mix well.
4. Add 1 cup water, cover the lid for 10-15 minute or till cooked.
5. While cooking check and stir occasionally (add water if needed).
6. After cooking; add garam masala, kasoori methi (crushed with hand), mix well and cook on medium flame for 2-3 minutes.
7. Garnish with chopped coriander leaves.
8. Aloo Gobi Matar Rassevali Sabji serve hot with pulao, biryani or any rice dishes, or Indian flat breads……
