
Achari Gobhi is one of the most delicious methods of cooking cauliflower. Achari Gobhi is a flavorful blend of carefully chosen spices and yogurt. Achari Gobhi is a dish with different and delectable taste. Those who love eating gobhi, will definitely relish eating this dish. It is not pickle but it is cooked in pickle spices, its make so delicious, I am sure you love this combination. Undoubtedly, it adds a brilliant touch to wraps too!
Gobhi/Cauliflower is low in fat, low in carbohydrates and high in dietary fiber, folate, water, and vitamin C, possessing a high nutritional density. Yogurt is nutritionally rich in protein, calcium, vitamin D, riboflavin, vitamin B6, and vitamin B12. Combination of these with spices are making rally healthy and the tangy taste which truly amaze you.
Method:
1. Heat oil in a kadhai/pan. Add fenugreek seeds, mustard seeds, cumin seeds, nigella seeds, fennel seeds and asafoetida.
2. Add coriander powder, jeera powder and mix it well for few seconds.
3. Add chopped onion and saut till it becomes golden brown on low to medium flame.
4. Add chopped green chilies, turmeric, red chili powder and again saut for a minute.
5. Add cauliflower florets, salt, sprinkle 1-2 tbsp water and mix well, cover it for cook till semi cooked, but not completely cooked. Stir it in between while cooking, avoid to stick to the bottom.
6. Add ginger-garlic paste, yogurt and mix well, saut on a medium flame for 4-5 minutes till yogurt gravy become thick.
7. Achari Gobhi is ready, garnish with chopped coriander leaves and serve with roti, paratha.

Notes
- You can also add pickle masala powder for more taste.
- You can also add potato with cauliflower if you like.
- While adding yogurt stir it continuously on a medium flame otherwise yogurt will curdle and will make more moisture in subji.
