Baingan Shimla Mirch Masala Sabji

Baingan Shimla Mirch Masala Sabji is perfect a side dish with roti,paratha or puri. Baingan Shimla Mirch Masala Sabji can be prepaid with besan masala mixture. If you like bharwan veggies but don’t have time to stuff and i know stuffed veggies takes more time to cook, then this is the perfect quickest sabji which taste same as a bharwan baingan or bharwan mirchi.   Baingan Shimla Mirch Masala Sabji is very delicious in taste with crunchy peanuts and spices. My all time favorite dish with hot phulka roti. I loved this Baingan Shimla Mirch Masala Sabji combo. I am sure you people also like it.

 

Baingan Shimla Mirch Masala Sabji

Ingredients:

• 4-5 Medium Sized Baingan (Brinjal) Roughly Chopped
• 2-3 Medium Sized Shimla Mirch/Green Pepper (Capsicum) Roughly Chopped
• ½ cup Besan (Chickpeas/Gram Flour)
• ¼ cup Roasted Crushed Peanuts
• 1 tbsp + 2-3 tbsp Oil
• ¼ tsp Mustard Seeds
• ¼ tsp Cumin Seeds
• Pinch of Asafetida (Hing)
• 2 tbsp Coriander Powder
• 1 tbsp Garam Masala
• 1 Lemon Juice
• Salt
• 1-2 tsp Sugar (Opt.)
• 1 tbsp Sesame Seeds
• 1 tsp Red Chili Powder
• ¼ tsp + ½ tsp Turmeric Powder

Method:

1. First take a bowl.
2. Add besan, crushed peanuts, 1 tbsp oil, coriander powder, garam masala, lemon juice, salt, sesame seeds, sugar (opt.) and red chili powder in a bowl, mix well and keep aside.
3. Now heat 2 tbsp oil in pan, add mustard seeds in hot oil, when mustard seeds crackle, add cumin seeds and hing.
4. Now on add chopped baingan, shimla, salt, ¼ tsp turmeric, mix it, then cover it and cook it on low medium flame. Do not overcook, leave it slightly crunchy.
5. When veggies are cooked, add prepared besan mixture and cover it for 2 to 3 mins.
6. Baingan Shimla Mirch Masala Sabji is ready to serve with roti.

Tips:

1. You can add chopped onion or other veggies as per your choice.
2. Add spices in besan mixture as per your taste.
