Pomegranate Mousse is a creamy, airy, fluffy, silky, luscious, smooth and delicious. Pomegranate Mousse is an eggless, no sugar, no gelatin but still soft and rich. I would advise to use coconut or almond yogurt for vegan Pomegranate Mousse recipe.
This light rose pink colored mousse is perfect for any party theme dessert. This no-bake pomegranate mousse dessert captures all the sweet and tangy flavors. The combination of a pretty dessert and an easy technique to make this too good an opportunity to serve.
Normally gelatin being used as a thickening agent in mousse, but being vegetarian I am using Agar-Agar. It is easily available in any Indian store. Click here to read more about Agar-Agar.
Pomegranate Mousse is healthy too because of its key ingredient Pomegranate. You could also use low fat Yogurt to make healthier low fat Mousse.
Ingredients:
• 2 cup Pomegranate Arils
• 2 cup Low Fat Greek Yogurt
• 2 tbsp Honey
• 10-12 Agar-Agar Strands
• 1 tsp Vanilla Extract
For Garnishing
• ¼ cup Pomegranate Arils for Topping
• Few Mint Leaves
• Chopped Pistachios (optional)
Method:
1. Blend pomegranate arils in a juicer with ¼ cup of water, pass the juice through a sieve so that the small remains of the hard seeds get removed and keep aside.
2. Now add yogurt, vanilla extract and honey in a mixing bowl, whisk it very well and make a smooth creamy texture.
3. Take a small bowl. Add ¼ cup hot water, add chopped agar-agar strands and mix it well till dissolve very well, keep aside.
4. Now add pomegranate juice into the yogurt mixture, add agar-agar mixture, whisk it again and mix well.
5. Now pour the mixture into small glasses or cup or small jar and keep inside a refrigerator for 2-3 hours till set.

If you use pomegranate juice instead of going through the process of making it from the Arils, what is the quantity of juice?
