Roasted Garlic Green Peas Soup is very healthy and rich in taste appetizer. This Peas Soup is vegan and gluten free. A great party starter. Roasted Garlic Green Peas Soup is so refreshing and full of flavor. It is so simple and easy to make.

Fresh Green peas has full of antioxidants and a rich source of protein with lots of vitamin C. Roasted Garlic Green Peas Soup is vegan and gluten free. If you are allergic to nut, then replace Cashew with coconut milk.

I just made this Soup in Summer for kids. In summer school vacation they always ask for some different appetizes to eat at regular interval. I was wondering what should I make for them which makes them full for longer time and healthier too, and don’t forget quick and easy too 🙂
. When I saw frozen peas in my fridge thought Roasted Garlic Green Peas Soup is best appetize for kids. My kids are normally don’t like peas and but they just love this Roasted Garlic Green Peas Soup specially because of cashew cream… no wonder.

Ingredients:

• 2-3 cup Fresh or Frozen Green Peas
• ¼ cup Cashew Nuts
• 1 Medium Sized Onion Roughly Chopped
• 1 Head Garlic
• 1 tbsp Olive Oil
• 1 tsp Ground Black Pepper
• Salt
• 3 cup Vegetable Stock or Water
• 1 tsp Crushed Red Pepper for Garnishing
• 1 tsp Ground Black Pepper for Garnishing
• 2-3 tbsp Cashew Cream for Garnishing (optional)

Method:

1. Take a sauce pan. Add olive oil, peeled garlic and roast it till golden brown.
2. Add roughly chopped onion, cashew nuts and sauté it for 2-3 minutes on medium to high flame.
3. Add green peas, salt, ground black pepper and mix it or stir it for a minute, then add water/stock and boil it for 7-8 minutes till peas become soft.
4. Switch of the flame and let it be cool down little bit. Now use hand blender and blend it till smooth and creamy texture.
5. Switch on the flame and again cook it till boil.
6. Now soup is ready. Pour into the serving bowl garnish it with cashew cream, black pepper and crushed red peppers.
7. Serve hot or cold Roasted Garlic Green Peas Soup with bread, croutons or as per your choice.

Tips:

• You can make your own cashew cream. Just soak some cashews in hot water for 30 minutes, then blend it and make smooth paste.
• You can also add broccoli if you like it. It makes soup healthier and more green.
• You can add one jalapeno while sautéing onion if you like little bit spicy soup.
