But Sukha Bhel isn’t just about texture; it’s a flavor explosion that awakens your palate. Dry chutney ingredients
• 1 cup Coriander Leaves
• ¼ cup Mint Leaves
• 2-3 Green Chilies
• ½ inch Chopped Ginger
• 4-5 Curry Leaves
• ½ cup Roasted Chana
• 1 tsp Cumin Powder
• 1 tsp Amchoor Powder
• Pinch of Hing
• ½ tsp Black Salt
• 1 tsp Regular Salt
• ½ tsp Chaat Masala
• 1 tbsp Mustard Oil

Other Ingredients
• 2-3 cups Puffed Rice or Kurmura/Mamara
• 5-6 Crushed Papdi Puri/Chaat Puri
• ¼ cup Fried Chana Dal
• ¼ cup Masala Peanuts
• ¼ cup Roasted Chana
• 1 Medium Sized Potato (Boiled, Peeled and Cubed)
• ½ cup Finely Chopped Onion
• ½ cup Finely Chopped Tomato
• ¼ cup Finely Chopped Cucumber
• ¼ cup Finely Chopped Raw Mango (opt.)
• ¼ Cup Chopped Coriander Leaves
• 2 Green Chilies Finely Chopped
• ½ tsp Chaat Masala
• Salt as per Taste
• ½ Lime Juice
• ½ cup Sev

Method
1. In a blender jar, add the dry chutney ingredients and blend the ingredients until you have a semi-coarse mixture. Set it aside for later use.
2. Take a big mixing bowl and add the puffed rice, crushed papdi puri (fried flour chips), fried chana dal (split chickpeas), masala peanuts, and roasted chana (black gram). These ingredients provide a delightful crunch to the Bhel.
3. Next, add the chopped veggies to the bowl. Include finely chopped onion, tomato, boiled potato cubes, green chilies, fresh coriander leaves, cucumber, and raw mango for a burst of freshness and vibrant flavors.
4. Now, it’s time to add the prepared dry chutney. Incorporate 2 tablespoons of the semi-coarse mixture into the bowl. This chutney adds a zesty and tangy taste to the Bhel. Additionally, sprinkle some chaat masala, squeeze in some lime juice, and add a handful of sev (fried gram flour noodles) to enhance the flavors further.
5. Finally, add salt according to your taste preference. Keep in mind that some of the ingredients may already contain salt, so adjust accordingly. Give the mixture a quick and gentle mix to ensure all the ingredients are well combined.
