Eggless Polish Cream Cheese Cookies also called Kolacky or Kolaczki. Eggless Polish Cream Cheese Cookies are a Christmas tradition. Eggless Polish Cream Cheese Cookies are Sweet, crispy and addicting. Polish Cream Cheese Cookies are widely popular in Poland as a Christmas tradition but they are popular in other Eastern European countries as well. Basically, Polish Cream Cheese Cookies are not eggless but my version is eggless.
Traditionally, these cream cheese cookies are filled with fruit preserves or jam. However, my favorite filling is raspberry. And believe me raspberry filling is unbelievable sensational! The raspberry jam filling is just the right amount of sweet to set off the flakey, buttery pastry. You can use any other fruit filling like, blueberry, strawberry, apricot and so forth. It is not limited to fruit preserves though. You can also use poppy seed, almond or other fillings. Literally anything you like. Kolaczki are great with many different fillings!
Being vegetarian whenever we go to bakery section in any shop/shopping center, we always check that bakery item has eggs or not before we buy. Unfortunately, most of bakery items contains eggs. And same happens with Kolacky when first time I saw it in shop, it just indulges me and there was something about it that makes my mouth water. But off course we did not buy it as it had eggs. My kids also demanded to eat this and asked me to make at home, which forced me to make this at home. I scrolled over few online recipes and decided to give one shot. Fortunately, it came out so good and tasty. Even my kids finished it so quickly. In fact, there were barely enough left to photograph. I am sure you will love this recipe.
Ingredients:
• ½ cup Cream Cheese
• ½ cup Butter, Softened

• ¼ cup Granulated Sugar
Method:
1. In a mixing bowl add soft butter and cream cheese and mix it using electric hand mixer or you can use hand whisker and bit it till soft and smooth mixture.
2. In another mixing bowl add flour, salt and baking powder and mix it well.
3. Now add the flour mixture into the cream cheese mixture, mix it, knead it and make the smooth soft dough, wrap the dough with plastic wrap and keep it inside the refrigerator at least 1 hour.
4. Preheat the oven on 350°F/175°C.
5. Take the prepared dough, divide it into two parts, cover it another one and again keep inside the refrigerator until working on first one dough part.
6. Dust the little flour on working place, roll out the dough in thin, less than 1/8 inch thin.
7. Take a pastry wheel cutter or sharp knife and trim the dough into a square then cut it into small-small squares (about 2 inch).
8. Place the ½ tsp jam on center of each squares, gently grab two opposite corners and fold one over the other, gently pressing down to try and seal them together.
9. Use same method for remaining squares and make more Kolackys.
10. Take another dough ball and use same method as first one dough ball.
11. Take a baking sheet, line it with parchment paper, place the prepared filled squares over it but no closer than 1 inch.
12. Sprinkle 2-3 pinches granulated sugar over the each Kolackys, place it into the preheated oven and bake it about 12-15 minutes or till slightly golden brown.
13. Remove the baked Kolackys from the oven, let it cool slightly on the same baking sheet and then move them gently to a wire rack to cool down completely.
