Fada Lapsi Recipe

Fada Lapsi also called Broken Wheat Halwa, Lapsi Halwa, Meetha Daliya, etc… It is one of the popular Gujarati dessert, made during the festival or auspicious occasion like Dhanteras/Diwali, Navratri, Akshaya Tritiya, Housewarming Ceremony, buying a new vehicle, etc…

Lapsi is a very appealing sweet dish of roasted and cooked broken wheat sweetened with jaggery and flavored pleasantly with cardamom powder. Roasting the broken wheat in ghee gives the Lapsi a rich brown color, intense aroma and nice flavor.

Fada Lapsi Recipe

You must be wondering, what is Fada Lapsi means? Fada means broken wheat and Lapsi means halwa. Broken Wheat is nothing but whole raw wheat grains cleaned and then processed coarsely. As it doesn’t undergo refining it is very healthy. You can use broken wheat in many dishes like lapsi, khichdi, upma etc…

Fada Lapsi Recipe

Ingredients:
• 1 cup Broken Wheat/Daliya
• ½ cup Grated Jaggery
• ¼ cup Ghee
• ¼ tsp Cardamom Powder
• 4-5 Cashew Nuts
• 7-8 Raisin/Manuka
• ¼ cup Slivered Dry Fruits (Almonds/Pistachios)

Method:
1. In a pressure cooker heat the ghee and fry the cashew nuts and raisin until it becomes golden brown, remove it using spoon and keep aside.
2. Now in same ghee add broken wheat and stir fry on medium heat about 5 mins until turns into the light brown color.
3. Add 1 ½ cup water, mix it and cover the cooker lid, cook it for 3-4 whistle. Switch of the flame and let it cool down little bit.
4. Now open the cooker and add jaggery, cardamom powder and cook till jaggery melts completely and ghee separates while continuous stirring.
5. Fada Lapsi is ready. Add fried cashew raisin and mix it well, garnish with dry fruits and serve.

Tips
• You can cook lapsi in a pan also without using a pressure cooker. But, it will take time to cook and you have to stir it continuously until it cooks.
• You can use sugar instead of jaggery.
• You can store lapsi in an airtight container an dput them in the refrigerator. Just before serving add some tbsp milk and heat it into a microwave or on a stove.

Surti Undhiyu aka Gujarati Undhiyu, is a winter de Surti Undhiyu aka Gujarati Undhiyu, is a winter delicacy. This recipe is very popular in Surat, Gujarat. Surti Undhiyu is a combination of winter veggies and fenugreek dumplings cooked in an aromatic blend of spices. Til Chikki also called Til Gajak or Tilgul. .
It is favorable during winter because of its health benefits. It is most popular during festivals like Makar Sankranti and Uttarayan in Gujarat and Maharashtra. This crunchy brittle, Til Chikki is made of jaggery and sesame seeds. You can have it whenever you crave for something sweet.
Til Chikki is made up of Sesame Seeds and Jaggery, so it is healthy too. Jaggery is a rich source of iron and protein. Sesame seeds are also healthy due to their nutritional content, including vitamins, minerals, natural oils, and organic compounds which consist of calcium, iron, magnesium, phosphorous, manganese, copper, zinc, fiber, thiamin, vitamin B6, folate, protein, and tryptophan.
