Sunkist Orange Salad

 

Mediterranean Orange Salad with Pistachios made with Sunkist® Blood Oranges and Cara Cara Oranges, along with pistachio, onion and a touch of Mediterranean Spices. It is one of the simplest salads, but bright and elegant, where the main star oranges get a lift with the addition of pistachios—totally delicious. This salad is pretty easy to make. It has a few ingredients and a simple dressing. You can throw it together quickly for a special dinner or add it to your get-together menu.

Do you know nutrition facts/values about oranges? Each type of orange has its own nutritional value, which I’ll share below:

Sunkist Cara Cara Oranges:
• Cara Cara Oranges are branded by Sunkist as The Power Orange® because they offer the most vitamin C of all Sunkist citrus varieties, with 100% of the recommended daily intake in just one orange! They are also a good source of folate and fiber.
• Cara Cara Oranges are also known for being extremely sweet with a lower level of acidity. They may look like Navel Oranges on the outside, but the seedless interior has a rich pink hue due to the natural presence of the antioxidant lycopene. Cara Cara Oranges are available from December through May.

Sunkist Blood Orange:
• Blood Oranges are high in vitamin C and also contain fiber, folate and thiamine. They get their name from the maroon color of their interior, which can vary in intensity. They offer a distinct, rich orange taste with a hint of fresh raspberry.
• These oranges get their red color from high concentrations of anthocyanin – natural plant pigments that have antioxidant properties. The peel often has a red blush hue which helps to distinguish it from other oranges. They tend to be smaller in size, fairly easy to peel and have few, if any, seeds. Blood Oranges are available from December through June.

Oranges are a big part of the healthy Mediterranean diet. We are lucky that bright citrus fruits are plentiful and in season during the drab, grey winter months. With their brilliant colors and sweet, tangy taste, they can brighten the darkest and coldest day. Can’t we all use some sunshine, just about this time of the year?

A sprinkle of warm Mediterranean spices, and a lime dressing with a touch of honey and olive oil, give this salad a complex flavor that is both super refreshing and even more delicious. This salad became our favorite dinner salad over here recently. Oranges are at their finest at this time of the year. When paired with chopped pistachios, onion with fresh green mint leaves they make the best salad. The lime-honey vinaigrette dressing adds the perfect touch.

Ingredients
• 2 Sunkist® Blood Oranges
• 3 Sunkist Cara Cara Oranges
• 1 tsp Mediterranean Seasoning Mix (Salt Included) + ½ tsp Extra
• 2-3 tbsp Extra Virgin Olive Oil
• 1 Lime, Juiced
• 1 tbsp Honey
• 2 tbsp Sliced Pistachios
• ½ cup Thinly Sliced Red Onion (opt.)
• 1-2 tbsp Chopped Mint Leaves for Garnishing

Method
1. In a small bowl, add olive oil, lime juice, honey and Mediterranean seasoning mix. Whisk it using a spoon until it’s mixed well and keep aside.
2. Slice a little piece off the top and bottom of each orange, so you have a stable cutting surface. Trim away all the skin and pith with a small sharp knife without taking too much off the fruit. Slice oranges horizontally and arrange on a serving platter.
3. Now spread the sliced pistachios and onion on top of the arranged orange slices.
4. Stir the salad dressing with spoon and drizzle over the arranged salad.
5. Sprinkle the seasoning mix as per your taste, then garnish it with chopped mint leaves.
6. Let it sit for 5 mins and then serve.

Tips
• Soak sliced onions in cold water and a pinch of salt for 10 minutes, if desired, to mellow the flavor. Drain and dry before using.
• You can garnish this salad with pomegranate arils if you like.
• If you want a little spicier taste, then sprinkle a little paprika over the salad.
