Vaghareli Khichdi or Masala Khichdi, is a most comfort food in this world for me. Vaghareli Khichdi is a South Asian rice dish made from rice and dal, Garam masala is a term for a blend of spices common in northern Indian cuisine. Vaghareli Khichdi is no onion-garlic recipe and one pot meal too. You can have it this Vaghareli Khichdi any day, any season or any time, even it perfect for lazy day. Vaghareli Khichdi is a perfect meal made with rice, lentil, veggie and wholesome spices.

Vaghareli Khichdi means Seasoned or tempered Khichdi is a traditional, authentic, healthy and quick food of Gujarat, even it’s a typical evening staple food of Gujju Household, which is serve it with kadhi, athanu (pickle) and papad.

Ingredients:

• 1 cup Rice
• ½ cup Mix Lentil [Toor Dal (Pigeon Peas), Moong Dal (split yellow lentil) and Chana Dal (Split Gram Lentil)]
• ½ cup Peeled and Cubed Potatoes
• 1 medium sized Carrot Peeled and Chopped
• ¼ cup Lilva Beans/Green Toor Dana or Frozen Green Peas
• 1-2 tbsp Peanuts
• 1-2 tsp Broken Cashew Nuts
• 2 Dry Red Chili
• 2 Small Pieces of Cinnamon Stick
• 3-4 Clove/Luong
• 1 tsp Ginger-Green Chili Paste
• 1 tsp Cumin Seeds
• Pinch of Asafoetida/Hing
• 1 tsp Red Chili Powder
• ½ tsp Garam Masala
• ½ tsp Turmeric Powder
• Salt
• 2 tbsp Ghee/Oil
• Chopped Coriander for Garnishing

Method:

1. Wash and rinse the rice and all dal for 3-4 times, then soak it for ½ hour.

2. Heat Ghee/Oil in the pressor cooker. Add cumin seeds, cinnamon sticks, clove, dry red chilies, pinch of hing and sauté for few seconds. Add ginger-green chili paste, red chili powder and again sauté for few seconds.
3. Add chopped potatoes, lilva beans, chopped carrot, peanuts and cashew nuts. Mix it well, and stir it for 2 minutes.

4. Add presoaked rice-dal mixture, salt, garam masala, turmeric powder and 3 cup water. Mix it well, cover the lid and cook it for 4-5 whistle.

5. After 4-5 whistle switch of the flame. Let it be cool down. Once it is cool down then remove the lid. Now add chopped coriander, mix well and serve khichdi top with dollop of ghee, sides with curd, papad or pickle.

Tips:

• You can add cauliflower, onion, brinjal or any other veggies as per your choice.
• You can skip any dal or use only moong dal.
• Cook khichdi on medium flame to avoid burning in bottom.

Ingredients

Instructions

Cheel Ni Bhaji Or Bathua Kadhi A sour and spicy yo Cheel Ni Bhaji Or Bathua Kadhi
A sour and spicy yogurt base curry is very popular in rural Sabarkantha, Gujarat. Cheel Ni Bhaji is very healthy. Mostly, Cheel Ni Bhaji is eaten with Makki ki roti or whole wheat flour bhakhri during winter season because this leafy veggie grows only in wintertime. It can be made without oil or any tempering, but some people add tempering over cooked curry, it is just by choice. Traditionally, it cooks in a clay pot over a clay stove with slow cooking.

Bathua also known as Cheel Bhaji or Chandan Bathua, it is a leafy vegetable seasonal to winter months. It is a close relative of spinach and prepared almost the same way. This plant is waxier and carries an earthy flavor. Bathua saag, raita and paranthas are some of its preparations. Common names are Chenopodium lamb’s quarters, melde, goosefoot and fat-hen and pigweed.
