Brown Sugar Vanilla Bundt Cake with Cream Cheese Glaze; A wonderful blend of brown sugar and cream cheese glaze are in this old-fashioned eggless pound cake. This rich and comforting brown sugar pound cake is a staple in our family!
This cake is a wonderful way to enjoy brown sugar in all its glory. It’s sweet and rich and moist and really just delicious, that too without eggs. It’s simple to make, beautiful and most importantly eggless and so very good in taste.

Brown Sugar Vanilla Bundt Cake

This is also a wonderful and delicious homemade gift for Christmas. The candied cherry and Tutti-Frutti, add a little extra sweet candied touch to this cake. A simple classic, you cannot go wrong when making this for anyone and everyone. Plus, the cream cheese glaze is SO GOOD and just pushes this recipe over the top.
You can make one ahead of time and store until you need it. It makes a great addition to a family meal, potluck, party, or even to carry on a family vacation. The possibilities are only limited by your imagination.

Brown Sugar Vanilla Bundt Cake

Ingredients

For Cake Batter
• 2 ½ cups all-purpose flour/Cake Flour/Maida
• 1 tsp Baking Powder
• ½ tsp Baking Soda
• ¾ cup Unsalted Butter (Softened)
• ¼ cup Vegetable Oil
• 2 cups Brown Sugar
• 2-3 tsp Vanilla Extract
• ¼ tsp Salt
• 1 cup Full Fat Buttermilk
• ¼ cup Full Fat Milk
• 1 tbsp Flax Seed Powder
• 2 tbsp White Vinegar
• ½ cup Raisin or Tutti-Frutti (opt)

For Cream Cheese Glaze
• 4 oz Cream Cheese
• ¼ cup Softened Butter
• 1 cup Powdered Sugar
• 1 tsp Vanilla
• 1-3 tbsp Milk

For Decoration (opt)
• ½ cup Tutti-Frutti
• ½ Candied Cherry

Method
For Cake
1. Preheat the oven on 350F/175C.
2. In a mixing bowl, sieve the flour, baking powder and baking soda all together and keep aside.
3. In another mixing bowl, add soft butter, sugar and whisk it till smooth and fluffy.
4. Now, add vanilla extract, vinegar, oil, flaxseed powder, buttermilk and milk, mix it well.
5. Now, little by little, add the flour mixture and mix it with spatula, it should be completely mixed.
6. Fold the raisins or tutti-frutti into the prepared batter.
7. Now, take a 10-inch Bundt pan, grease it inside with oil and dust lightly with flour.
8. Pour the prepared cake batter into the pan, tap the pan on kitchen counter for even cake surface.
9. Place the pan into the preheated oven and bake it about 1 hr, check with a pick insert in center if it comes out clean that mean it is ready, if not, then bake it more for 7-8 mins or until it comes out clean.
10. Once done let it cool down for 10-12 mins, then invert the cake over a wire rack.

For Cream Cheese Glaze
1. In a mixing bowl, whisk cream cheese till soft and fluffy.
2. Then add sugar, butter and vanilla, and mix it till smooth.
3. Add required milk and make thick, but pourable consistency glaze.

Process
1. Place the Bundt cake on a plate or cake stand, pour the cream cheese glaze, let it set and then décor it with candied cherries and tutti-frutti or as per your choice.
2. Brown Sugar Vanilla Bundt Cake with Cream Cheese Glaze is ready to serve, slice it and enjoy or store it in fridge for later, whenever you’re ready to eat.

Tips
• If you do not have buttermilk, then use ¾ cup yogurt + ¼ cup water, whisk it and use.
• You can use chopped dry fruits instead of Tutti-Frutti or raisins or just skip it to make it without all these.
• Do not add too much milk in glaze, otherwise it will be hard to set. If it’s thick, then warm up little bit in microwave, so it would be pourable.
• Decorating cake is optional, you can skip it or décor it with your choice, like fresh chopped fruits or edible sprinkles, etc.
