Cashew Coconut and Berry Popsicles

These Popsicles are perfect summer dessert for kids of all ages. It’s definitely popsicle season, because its summertime and Instagram/Pinterest are flooding with frozen desserts pics. Moreover, It is a healthier alternative to creamy popsicles made with heavy cream, corn syrup and sugar. It is sweetened with a maple syrup and flavored with vanilla extract. I added mixed berries in it, but you can use just blueberries or raspberries or blackberries whatever you like. Either way, it is a delicious summer treat that you can easily make for your family.

Ingredients:

• 1 cup Soaked Cashew Nuts
• 1 ½ cup Coconut Milk
• ¼ cup Maple Syrup
• 1 tsp Vanilla Extract
• 1 cup Mixed Berry Fresh or Frozen

Method:

1. In blender Jar, add soaked cashew nuts and blend it till smooth.
2. Add coconut milk, maple syrup, vanilla extract and again blend it till all mix very well.
3. Now add mixed berries and pulse until it smashed, but don’t blend completely.
4. Pour the mixture into the popsicle molds and freeze for at least 5-6 hrs or overnight.
5. Popsicles are ready for creamy frozen treat.

Tips:

• You can use any sweet syrup like honey, dates, sugar for sweetener.
• Chopped fruits and other smashed can be added into it.
