Mango Lassi Popsicles

Mango Lassi Popsicles are a great summertime treat! Mango Lassi Popsicles are made with healthy ingredients. Mango Lassi Popsicles are easy to make at home. Mango Lassi Popsicles are made with fresh mangoes and plain yogurt. Mango Lassi Popsicles are perfect for a snack, dessert or even breakfast!

These creamy fruit popsicles are inspired by the traditional Punjabi Lassi drink of India. You can also easily make them with any fruit or mix of fruits that you prefer and just froze it, your frozen treat is ready to enjoy. I used plain yogurt and sugar to sweeten the popsicles, but you can also use sweet vanilla Greek yogurt instead of it. Make layers in your favorite popsicle mold and you are all set to enjoy this summer treat.

Mango Lassi Popsicles

Ingredients:

• 1 ½ cup Full Fat Yogurt/Dahi
• 2 Kesar/Alphonso Mangoes
• ¼ cup Fresh Cream/Whipping Cream (optional)
• ¼ cup Sugar or 2-3 tsp Honey
• ¼ tsp Cardamom Powder (optional)
• Popsicle Mold 6-8 or small Plastic Cups

Method:

1. Wash the mangoes, then peel it and cut it into small pieces and discard the hard seed.
2. Add the mango pieces into a mixer jar. Add 1-2 tbsp sugar or 1 tsp honey as per taste and blend it to make a puree. Remove the mango puree in a bowl and keep it inside a freezer about 30 mins.
3. Now in the same mixer jar; add yogurt, fresh cream, 2-3 tbsp sugar or 1-2 tsp honey, cardamom powder and blend it till it becomes smooth puree or till all sugar get dissolved properly.
4. Now remove the yogurt mixer into another bowl and place that bowl into the freezer for the same time of the mango puree.
5. Take popsicle molds and add 2-3 spoon of the mango puree in each of the mold. Add 3-4 tbsp yogurt mixture over the mango layer, then add 1-2 tbsp of the mango puree and 1 tbsp yogurt. You can also make layers as per your choice.
6. Wrap each mold/cup with the plastic wrap, then snip it little bit on the top with a scissor or a knife, so you can insert a popsicles stick.
7. Insert popsicle stick into the filled molds, then place the filled molds into the freezer and let it set for 7-8 hours or till it becomes hard.
8. Mango popsicles are ready, just before serving dip the mold in warm water and then slowly remove the popsicle from the mold and enjoy the seasonal summer treat.

• You can just skip the cream or cardamom if you don’t want.
• Use thick frozen mixture so you can make layers properly.
