I am an Indian food fan. Aloo Gobi is my absolute favorite and since I’ve started eating whole food, plant based (no oil), I’ve struggled to find recipes I love. I notice that your recipes include oil or ghee or similar ingredient. Because I no longer use oil or processed, vegan “butters” or cheeses, do you think these recipes will be as great without the oil and ghees? My favorite Indian restaurant makes Aloo Paratha, which is a whole wheat thin bread with potatoes smashed inside. Soooo good. Too much oil, though. I miss it so much!
