This Vegetarian Burritos are so good, you’ll want to have Vegetarian Burrito every night, not only for dinner time but also perfect for lunch time, breakfast or any hungry moments. Just one Vegetarian Burrito and I am sure your tummy will full with healthy satisfaction.
Burrito is a traditional food of Ciudad Juarez, a city in the northern Mexican state of Chihuahua, where people buy them at restaurants and roadside stands. Northern Mexican border towns like Villa Ahumada have an established reputation for serving burritos. Authentic Mexican burritos are usually small and thin, with flour tortillas containing only one or two ingredients. But In the United States, burrito fillings generally include a combination of ingredients such as Mexican-style rice or plain rice, spicy beans, lettuce, tomato salsa, guacamole, cheese, and sour cream, and size also varies.
Today I made full of American style or you can say American-chipotle style vegetarian burrito. This is a perfect recipe which is all healthy food served in one dish, like rice, beans, veggie and bread everything together with tasty flavor, I am sure you’ll love it…..so why wait, try this healthy meal and enjoy you day with healthier way…
Ingredients:
For Spicy Beans
• 2 cup Soaked and Cooked Beans (Kidney beans or Black beans)
• 1 tsp Garlic Paste
• ½ cup Tomato Salsa (click on Tomato Salsa for recipe)
• Salt
• ½ tsp Black Pepper
• 1 tsp Cumin Powder
• 1 tbsp Oil
• 1 tsp Red Chili Powder/Paprika
Other ingredients
• 7-8 Homemade Tortilla (click on Tortilla for recipe)
• 1 cup Guacamole (click on Guacamole for recipe)
• ½ cup Sour Cream
• 1 cup Cooked Rice
• ¼ cup Sweet Corn Semi Cooked
• ½ cup Chopped Onion
• ½ cup Capsicum/Bel Pepper (optional)
• ½ cup Chopped Tomato
• 2 cup Chopped Lettuce
• ½ cup Grated Cheese (optional)
Method:
For Spicy Beans
1. Heat oil in a pan. Add garlic paste and sauté for few seconds.
2. Add homemade tomato salsa, red chili powder, black pepper, cumin powder, salt and sauté for 2-3 minutes on medium flame.
3. Add ¼ cup water, beans and cook for another 2-3 minutes and keep aside.
Process
4. Heat the griddle. Reheat both sides of the homemade tortilla for few seconds.
5. Place the tortilla on a plate. Now spread layer line of rice, prepared spicy beans, guacamole and sour cream as per your choice.
6. Now sprinkle some onion, tomato, capsicum, sweet corn, lettuce and grated cheese on tortilla.
7. Fold three sides of tortilla corners and make a roll.
8. Use same process for other tortilla and make more burritos.
Tips:
• You can use store bought tomato salsa, guacamole or tortilla.
• You can use canned beans instead of soaked and cooked beans.
• You can use any beans like black or red, as per your choice.
• You can server this burrito as a full meal or breakfast too.
