Vegan Meringue Recipe (Aquafaba)

Vegan Meringue

Vegan Meringue

Vegan Meringue is perfect eggless vegan crunchy dessert. Vegan Meringue is less ingredients recipe. Vegan Meringue is very easy to make. After this recipe, you going to love cooking with Aquafaba like never before.

The first and main element to these Vegan Meringue is Aquafaba. Yes, you are hearing correct. Even I was astonished when I heard this first time. It sounds weird but believe me it is not. You do not have to go to special store to get it. And it is not expensive too. Aquafaba is simply the liquid that can made from cooked chickpeas water or just comes inside the store bought can of chickpeas. Actually, the one you usually throw away when you drain your garbanzo beans (aka Chickpeas) – that liquid is basically not less than gold in recipe. It transforms into a beautiful meringue batter that can take on any flavor you add on. And Vegan Meringue is one of them.

Vegan Meringue

Ingredients:

For 1 cup Aquafaba/Chickpeas Brine
• 2 cup Chickpeas/Garbanzo Beans/Chana
• 8 cup water

Other Ingredients for Meringue cookies
• ½ cup powder Sugar
• ½ tsp White Vinegar
• ½ tsp Vanilla Extract
• 2-3 tsp Beetroot Juice (Fresh Beetroot Grated and Squeezed)
• 2-3 Pinch tsp Turmeric (Dissolved in 1 tbsp Water)

Method:

To Make Aquafaba
1. Wash and soak the chickpeas for 7-8 hrs, then drain the water.
2. In a large deep pan add soaked chickpeas, 8 cup of water and cook it about 60-70 mins, first cook on high flame till boiling point then turn the flame on medium to low flame and cook it till soft.
3. Let it cool down completely, then drain the cooked water into a small container and store it into a refrigerator.
4. Aquafaba water is ready use it whenever you want.
5. Residual chickpeas you could use for to cook Chana Masala. (click here for Chana Masala Recipe)

To Make Vegan Meringue
1. Take a big bowl, add the prepared ½ cup aquafaba, then whisk it using a electric whisk or strand mixer and whisk it till stiff foamy peak.
2. Check the foam bowl, doing upside down, if foam is not sliding that means its perfect.
3. Now add vanilla extract, vinegar and again whisk it.
4. Add sugar gradually 1-1 tbsp into the foamy mixture, mix it well till glossy and thick mixture like soft icing. Keep aside.
5. Preheat an oven on 110C/210F.
6. Line parchment paper on a baking sheet and keep aside.
7. Now take a ziplock bag, trickle ½ -½ tsp of beetroot juice and liquid turmeric inside making sure it coats the insides of the bag and doesn’t gather at the bottom.
8. Now spoon meringue mixture into the bag – you may want to lay the bag on its side for this so that the beetroot and turmeric juice doesn’t all run to the corner of the bag.
9. Cut the small corner of the bag and use it like a piping bag and make Meringue onto the lined baking sheet. Make a space between all Meringues.
10. Now bake the piped meringues in the preheated oven about 70-75 mins, then turn off the oven but leave the meringue cookies inside for another 30-35 mins, so it can be easily removable and dry out fully.
11. Vegan Meringue are ready, store it into the air tight container to avoid from air moisture.

Summer has arrived, and we're savoring my cool smo Summer has arrived, and we're savoring my cool smoothies made with my favorite fruit combinations. I made smoothies with SunGold Kiwi-Mango, SunGold Kiwi-Strawberry, and SunGold Kiwi-Mixed Berry for myself and the kids. In our summer smoothie, we love the high vitamin C content of sweet & refreshing SunGold kiwi. These smoothies are simple to make and quite tasty. If you've noticed, one of my favorite fruits in smoothies is kiwi. I discovered these SunGold @zesprikiwifruit @shopritestores and purchased two boxes (they come in a 1 pound pack) along with my grocery shopping from our local ShopRite. I purchased everything I'll need to create smoothies.

Earlier, I made Passion Fruit Panna Cotta and Pineapple Passion Fruit Mojito, but kulfi will always in top of the list.
