Veggie Cheesy Corn Quesadilla is perfect cheesy veggie savory treat or appetizer or starter for any time, you can have Veggie Cheesy Corn Quesadilla in breakfast, lunch or dinner. These mildly spiced quesadillas get a quick start with fresh peppers and frozen sweet corn. A great dish that is filling, healthy, full of protein and veggies! These quesadillas are great when you have some homemade tortillas.
The origin of the quesadilla was colonial Mexico. The quesadilla as a food has changed and evolved over many years as people experimented with different variations of it. Quesadillas have been adapted to many different styles. In the United States, many restaurants serve them as appetizers, after adding their own twist.
My girls are crazy for cheese, they love any cheesy food and you know this generation kids they love pizza, burger, mostly junk food not only kids but even grownups too…. Lol me too included in that…. Love cheesy food. But yes there are so many ways to make your junk food healthier way, using veggies, beans and green and make your favorite healthy food tastier. I love these Veggie cheesy corn Quesadilla, stuffed with veggies, green and yes with cheese totally love it. So what are you thinking don’t waste your time and make this yummy Quesadilla!!!! I’m pretty sure you will love it.
Ingredients:
• 4-5 Homemade Tortillas Wrap/Flat Bread (click here for recipe)
• 1 cup Grated Mozzarella Cheese
• ½ cup Sweet Corns
• ½ cup Chopped Onion
• ¼ cup Fresh Tomato Salsa (click here for recipe)
• 1 cup Chopped Mix Peppers (Red, Orange, Yellow or Green)
• ½ cup Roughly Chopped Spinach
• 2-3 Garlic Cloves Minced
• ½ tsp Black Peppers Powder
• ½ tsp Red Crushed Peppers Flacks
• ½ tsp Sugar (optional)
• salt
• 1 tbsp Oil for Veggies
• Oil for Roasting
Method:
1. Heat oil in a pan. Add minced garlic, then add chopped onion, fry it till golden brown.
2. Add tomato salsa, sugar and sauté it for 2-3 minutes. Add chopped mix peppers and stir fry it for again 2-3 minutes on medium flame.
3. Now remove the prepared mixture into a bowl and add sweet corns, salt and black pepper powder in it.
4. Let it cool down for few minutes. Now add chopped spinach in it and mix it well.
5. Your stuffing mixture is ready, keep aside.
6. Now heat the griddle, spread or brush few drops of oil over it and place one tortilla flat bread.
7. Spread the 2-3 full spoon of the stuffing mixture over the tortilla’s half circle part, then spread the grated cheese over the mixture.
8. Cover the another half circle over it and roast the stuffed tortilla both side using few drops of oil till both sides become crispy golden brown.
9. Now remove it into a plate and cut it into two pieces using pizza cutter or knife.
10. Use same process with the remaining stuffing mixture and tortillas to make more quesadillas from it.
11. Veggie Cheesy Corn Quesadilla is ready, serve it with salsa or with cilantro lime pesto or with any dip.
Tips:
• You can add 1 tsp Italian seasoning for more taste.
• You can add any beans into the stuffing.
• You can even bake it in the 400F preheated oven for 7-8 minutes with spreading little oil.
