Besan Ladoo is one of the most popular mithai in Indian cuisine. Besan Ladoo also called Besan Laddu. Besan Ladoo is very rich in taste. Besan Ladoo is made from besan. Besan Ladoo might be known by various names, but this delicious sweetened Ladoo famous all over the country.

Besan Ladoo is a popular Indian sweet dish made of Besan (chickpea flour or gram flour), sugar and ghee. Besan is roasted in ghee till golden brown appearance with nutty fragrance. Then sugar is added to it. Dry fruit pieces also can be used. Small small balls are then made from this mixture. It has a long shelf life. It is often served at festivals, family events and religious occasions in India.

When making this, remember that the rich flavor of the ladoo depends on how well you cook the besan. Under-cooking it will leave behind a raw taste, which will ruin the whole recipe. So, make sure you cook it well. The proportion of ghee and besan is also important as you might end up with a dry or very soft ladoo if it is not done right.

Once you have the mix ready, take some in your palm, shape it into a round and keep rolling it in your hand till you get a smooth, lustrous, ghee-tinted texture on the surface. It will look so irresistible at this stage that you would just want to pop it into your mouth! That’s when the Ladoo is ready.

Ingredients:

• 4 cup Besan/Chickpeas Flour
• 1 cup Ghee
• 2 cup Powdered Sugar
• ¼ tsp Cardamom Powder
• ¼ cup chopped Almonds and Cashew Nuts
• 2-3 tbsp Raisins (Manuka)
• 2 tbsp Almond, Cashew Slivers for Garnishing

Method:

1. Heat the ghee in a deep pan or kadhai. Add the besan and roast it continuously till raw smell goes out and gives nutty flavor, it will take about 13-15 minutes on low flame.
2. Switch of the flame and stir it again for few minutes, then remove it into the big mixing bowl and let it cool down completely.
3. Once cool down add powdered sugar, cardamom powder, chopped dry fruit and raisins and mix it properly.
4. Now take small-small portions of the mixture and make small size of balls out of it.
5. Besan Ladoo is ready. Garnish it with almonds or cashew slivers. You could store it into the air tight container.

Tips:

• Roast the flour properly till it gives nutty flavor, otherwise it will stick in your mouth and gives raw taste.
• Add boora (kind of sugar) instead of powder sugar if possible.
• You can store into the airtight container up to 15 days.

Ingredients
1 cup Prego+® Plant Protein Traditional Italian Sauce
2-3 Zucchini
1/2 cup shredded mozzarella cheese
2-3 tsp bread crumbs
For filling:
1 1/2 cup Ricotta cheese 
1/2 cup shredded Parmesan cheese 
1/4 cup chopped basil
1/2 tsp red pepper flakes
1/2 tsp ground black pepper
1 tbsp Chickpeas flour
Salt
Preheat the oven on 400F. In a mixing bowl add all filling ingredients and mix it well. Slice the zucchini into long thin rollable strips, arrange over paper towel for 30 mins to dry.
Spread a full spoon mixture over the strip and roll it. Make more rolls and keep aside.
In a baking dish add sauce and arrange zucchini rolls over the sauce, spread the mozzarella cheese on top and sprinkle bread crumbs, then bake it for 25-30 mins. Serve and enjoy.

A sour and spicy yogurt base curry is very popular in rural Sabarkantha, Gujarat. Cheel Ni Bhaji is very healthy. Mostly, Cheel Ni Bhaji is eaten with Makki ki roti or whole wheat flour bhakhri during winter season because this leafy veggie grows only in wintertime. It can be made without oil or any tempering, but some people add tempering over cooked curry, it is just by choice. Traditionally, it cooks in a clay pot over a clay stove with slow cooking.

Bathua also known as Cheel Bhaji or Chandan Bathua, it is a leafy vegetable seasonal to winter months. It is a close relative of spinach and prepared almost the same way. This plant is waxier and carries an earthy flavor. Bathua saag, raita and paranthas are some of its preparations. Common names are Chenopodium lamb’s quarters, melde, goosefoot and fat-hen and pigweed.
