This Veggie Pita Sandwich made with healthy homemade whole wheat pita pockets and loaded fresh veggies. Craving a fast and healthy lunch? This simple sandwich packs a lots of flavor and nutrition, which makes it ideal for an easy weekday meal. hearty and delicious vegetarian sandwiches that will fuel you all afternoon. Enjoy fresh and healthy hummus and vegetables in whole wheat pita bread.

Ingredients:

• 4-5 Whole Wheat Pita Breads (please click here for recipe)

For Veggie Cream Cheese

• 1 cup Cream Cheese
• ¼ cup Chopped Onion
• ½ cup Peeled & Chopped Cucumber
• ½ cup Halved Cherry Tomatoes (Red & Yellow)
• 1 tsp Black Pepper Powder
• Salt

Other ingredients

• ½ Cup Cilantro Mint Hummus (please click here for recipe)
• ¼ cup Red Radish Sliced
• ½ cup cucumber Sliced
• ¼ cup Grated Carrot
• ¼ cup Pomegranate Arils
• Some Lettuce Leaves
• Some Spinach Leaves

Method

1. In a mixing bowl add cream cheese (use room temperature cream cheese), onion, tomatoes, cucumber, salt, black pepper powder and mix it well, keep aside.
2. Now take pita bread, cut it into half circle, so it can become half circle pocket.
3. Place lettuce leaves inside the pocket, then stuff and spread some prepared cream cheese mixture into the pocket.
4. Then place or stuff the sliced cucumber, radish, spinach, sprinkle some grated carrot and pomegranate arils.
5. Now spread some cilantro mint hummus, you can apply it before spreading cream cheese mixture.
6. Quick fix veggie pita sandwich is ready, serve it fresh or later.

Tips:

• You can use any hummus or pesto as per your taste.
• You can add any veggies in stuffing as per your choice.
• You can use veg mayonnaise instead of cream cheese (I used cream cheese because mayonnaise can make sandwiches soggy, if you eat later)
• You can pack this for lunch box too.

    I love a sandwich but find I do an open one with homemade oat and yoghurt bread or the pita/flatbread style put together whilst warm to have the flexibility to do a sandwich, gf vegan.
