Watermelon Berry Salad

Watermelon Berry Salad, a perfect summer salad with fresh seasonal fruits blend with garden fresh herbs and tangy honey lime vinaigrette.
This is summertime and we are enjoying all fresh fruits. But, only because of fresh seasonal fruits I like summer a lot, otherwise I like spring season most. We are celebrating the season’s fresh fruits before they vanish, by offering this fresh vibrant salad with Watermelon, Strawberries, cherry with honey lime dressing.
Watermelon is refreshing on its own, but when you add the honey lime vinaigrette it gives another layer of flavor that will make your mouth watery.  The sweetness of the honey and zing of the lime take this simple summer salad to a whole new level. When it comes to summer, fruit melon and berries are my absolute fav, but watermelon is on top of the list.

Watermelon Berry Salad

Ingredients:

• 2 Cups Cubes of Watermelon
• 1 Cup chopped Strawberries
• 1 Cup Pitted cherries
• ¼ Cup Chopped Fresh Herbs (Mix of Cilantro, Thyme, Basil & Mint)
• ¼ Tsp Himalayan Pink Salt
• ½ Tsp Ground Black Pepper

For Vinaigrette
• ¼ Cup Extra Virgin Olive Oil
• 1 Lime Juice
• ½ Tsp Lime Zest
• 1 Tsp Honey
• ¼ Tsp Salt

Method:

1. In a mixing bowl add cubed watermelon, strawberries and cherries.
2. Add garden fresh chopped herbs, pink salt, ground pepper and mix it or toss it gently. Keep it aside.
3. In a small bowl add virgin olive oil, lime juice, lime zest, honey and salt, whisk it with spoon until mix properly, vinaigrette is ready.
4. Just before serving the salad take the prepared fruit bowl and pour the honey lime vinaigrette all over the fruit mixture, toss it or mix it.
5. Watermelon Berry salad is ready to serve. You can serve it along with you summer meal or just enjoy as it is.

Tips:

• You can add choice of berries or melons like blueberries, raspberries, muskmelon, etc…
• Add or skip any of herb per your taste.
• Sprinkle some chaat masala just before serving if you like the tangy spicy flavors.
