Watermelon Gazpacho

Watermelon Gazpacho is light and refreshing. It is healthy, low fat and very easy to digest, sweet and spicy in taste. Watermelon Gazpacho has perfect for a summer soup. Actually this Gazpacho is much like tomato gazpacho, only by replacing tomato with watermelon. It has an essence watermelon, cucumber and tomato. In my version, we are still using some tomatoes, so you get a little bit of tomato flavor in the soup, along with cucumber, onion, and bell pepper.

When I first heard about of gazpacho; I was wondering, cold gazpacho??? And you must be surprise too… To be honest, for years I didn’t enjoy gazpacho and oddly enough I love cold tomatoes, cool cucumbers, and every ingredient that typically makes up this dish; but the phrase ‘cold soup’ left me feeling ehhh. I would say it is one of best soup will make you wonder on its taste and drown into the amazing flavor.

Ingredients:

• 3-4 cup Seedless Watermelon Cubes
• ½ cup Chopped Tomato
• ¼ cup Chopped Red Bell Pepper
• ¼ cup Chopped Red Onion
• ½ cup Chopped Cucumber
• 1 Jalapeno
• 1 Garlic Clove
• ½ tsp Roasted Cumin Seeds
• ½ Lemon Juice
• 1 tbsp Olive Oil
• 1 tbsp Red Wine (optional)
• ¼ cup Cilantro Leaves Chopped
• 2-3 Tbsp Mint Leaves
• ¼ tsp Black Pepper Powder
• Salt

 

Method:

1. Reserve some chopped veggies pieces for garnishing as per your choices.
2. Now add all ingredients into the mixer blender and blend it till smooth puree.
3. Remove it into the big bowl, then place it into the refrigerator for 30 mins.
4. Take serving cups or bowl and add cool watermelon gazpacho into the cups.
5. Garnish it with reserved veggies as per your taste and serve it immediately.

Tips:

• You can keep this gazpacho into the refrigerator for 2 days.
• You can add feta cheese for garnishing.
• Serve with croutons or bread sticks as a sides.
