Kaju Pista Roll

Kaju Pista roll is an amazing combination of nutty flavors of cashews and pistachios rolled into one. The amazing cashew and pistachio are rich in taste and texture. You can serve it to your guests or relish its amazing taste during your festivities. Everyone will savor its amazing taste for sure. The pieces are usually decorated with edible silver foil.

Diwali or Deepavali is the festival of light, festivity and celebration. No celebration or festival is complete without sweets. Diwali is one of the most beautiful festivals but it’s also a time to eat! With so many options discover the Diwali festival food you can’t miss. Celebrate deliciously with these traditional examples of Diwali food including Kaju Katli, Beasn Laddu, Motichoor ladoo, Jalebi, Halwa, chakli, Chivda and many more.

 

Ingredients
For Pista Filling
• 1 cup Pistachios Powdered
• ¼ cup Icing Sugar
• ¼ cup milk powder
• 2-3 tbsp Milk
• Pinch of Green Food Color(opt.)

For Kaju Roll Cover
• 1 cup Cashew Nuts Powdered
• ½ cup Sugar
• ¼ cup Water
• ¼ tsp Cardamom Powder
• ¼ tsp Saffron
• 1 tbsp Kewra Water(opt.)
• 1 tbsp Ghee

Method:
For Pista Dough
1. In a mixing bowl add pistachios powder, milk powder, sugar, pinch of food color and mix it well.
2. Now add milk and make a sticky dough, add more tbsp milk if required, cover it and keep aside.

For Kaju Roll Cover
1. In pan add sugar and water, bring it to the boil, stir the sugar syrup till it forms 1 string consistency.
2. Then add saffron, cardamom powder and kewra water.
3. Now add cashew powder into the sugar syrup and mix it well.
4. Add ghee and cook it while siring continuously on medium flam till the dough is formed leaving the pan.
5. transfer the cashew dough mixture into the bowl and let it little bit cool down so you can handle.

Process
1. Now place the cashew dough on wax paper or you can use aluminum foil, roll it into the big oval shape.
2. Then cut the rolled cashew dough to half.
3. Take a prepared pista dough and roll into a long cylinder shape to fill.
4. Place the pista roll over rolled cashew sheet. Then slowly start to cover the half cashew part over the pista filling.
5. then slowly roll to make the kaju pista roll smooth and uniform cylinder using your hand palm.

6. Finally cut the roll 2 inches long, kaju pista roll is ready, docor the roll using chandi warkh or serve as it is.

Tips
• You can store kaju pista rolls into the refrigerator for 10-12 day in airtight container.
• While making stuffing, make sure you bind it well after adding the milk.
• Cashew dough should be cooked properly otherwise roll will become too soft.

Surti Undhiyu aka Gujarati Undhiyu, is a winter de Surti Undhiyu aka Gujarati Undhiyu, is a winter delicacy. This recipe is very popular in Surat, Gujarat. Surti Undhiyu is a combination of winter veggies and fenugreek dumplings cooked in an aromatic blend of spices. Til Chikki also called Til Gajak or Tilgul. .
