Hey friends, welcome to Binjal’s VEG Kitchen!

I’m Binjal Pandya, the creator behind Binjal’s VEG Kitchen. I’m a Gujarati, originally from the beautiful city of Mumbai, India, and now living in Pennsylvania, USA, with my wonderful husband and our two daughters, Riddhi and Maahi. My daughters have grown up around my cooking and are still two of my most honest food critics! 😊

Cooking has always been a big part of my life. I grew up surrounded by food, family and a family business, and I was fortunate to learn the importance of hard work, tradition and doing things with love from a very young age.

My biggest inspiration has always been my mom. I was raised by her in a single parent household, and she taught me some of the most important lessons in life. She taught me to be independent, work hard, stand on my own feet and never be afraid to follow my dreams. Much of who I am today comes from the strength and values she gave me, and I will always be grateful for that.

My Journey With Cooking

I have a Master’s degree in Commerce from Mumbai, and after completing my education I became deeply involved in our family business. Cooking, however, was always something I naturally gravitated toward whenever I had free time.

I started cooking for my family, including my grandparents, cousins and eventually my husband and his family. After marriage, cooking became an even bigger part of my everyday life. I cooked everything from breakfast and lunch to dinner and sweets, and I learned by doing, experimenting and, of course, listening to my family’s opinions!

Coming from different family backgrounds also meant that our food preferences and cooking styles were sometimes very different. That gave me the opportunity to experiment with flavors and techniques and slowly develop my own style of cooking.

What started as something I simply loved doing eventually became much more than a hobby.

How Binjal’s VEG Kitchen Started

When we moved to the USA because of my husband’s job, life changed in many ways. In 2014, I discovered the wonderful world of food blogging and realized that I could combine several things I loved: cooking, photography, creativity and sharing food with others.

Before starting my website, my husband and I started a Facebook recipe page just for fun. To our surprise, people loved the recipes and started asking for more. That encouragement gave me the confidence to take the next step and create Binjal’s VEG Kitchen.

I began sharing recipes from my kitchen, photographing the food and documenting the recipes I cooked for my family. What started as a little project to share my passion slowly grew into a food website and a community of people who enjoy cooking and discovering vegetarian recipes with me.

Over the years, Binjal’s VEG Kitchen has become a collection of the food I love to make and share, from traditional Gujarati and Indian recipes to regional favorites, sweets, snacks, everyday meals and my own creative twists on familiar dishes.

Every recipe I share comes from my kitchen and is made, tested and enjoyed by my family.

Food, Family & Photography

Cooking isn’t the only thing I fell in love with through blogging. Food photography became another passion of mine.

When I started, many of my recipe photographs were taken with a cell phone. My husband eventually gifted me my first DSLR, and that opened an entirely new creative world for me.

Since then, I’ve spent countless hours learning about food styling, lighting, composition and photography. Today, photography is still one of my favorite parts of creating recipes. I love capturing not only food but also flowers, nature, landscapes and the little moments of everyday life.

I’m always learning, experimenting and trying to make each recipe and photograph a little better than the last.

At Binjal’s VEG Kitchen, you’ll find vegetarian recipes inspired by my Indian roots, my family and my life in the USA.

I especially love sharing Gujarati and regional Indian recipes, traditional family favorites, easy everyday meals, snacks, sweets and festive recipes. Sometimes I recreate something exactly the way I remember it from home, and sometimes I give a traditional recipe my own little twist.

My goal has always been simple: to share recipes that are approachable, delicious and something you will actually want to make in your own kitchen.

I hope that when you visit Binjal’s VEG Kitchen, you feel like you are cooking along with me in my kitchen.

What began as a small passion project has become such a meaningful part of my life, and that would not have happened without all of you.

Every recipe you try, every comment you leave, every message you send and every photo you share means so much to me. Knowing that something I cooked in my kitchen has made its way into someone else’s home is one of the most rewarding parts of being a food creator.
