Mango Coconut Chia Pudding

Mango Coconut Chia Pudding is a super healthy and quick breakfast. Mango Coconut Chia Pudding can be eaten as a dessert too. Mango Coconut Chia Pudding is perfect to eat on the go! It is so easy to make it. I made it twice last week and it didn’t last 24 hours in the fridge 😉 My family just love it. I haven’t posted any chia recipe on my blog yet however, spring is here and I figured out this is the right time.

A tropical getaway with this Mango Coconut Chia Pudding! A great dessert, snack, or even breakfast, this chia seed pudding is bursting with nutrients and flavor. The combination of the creamy coconut chia pudding with the sweet mango puree is a dish that is sure to impress and super simple to make. Not to mention, it’s full of nutrients, so you don’t have to feel guilty eating this sweet treat.

Here are some benefits about chia seeds:

• Help weight loss: Chia seeds are popular for weight loss. They reduce food cravings by preventing some of the food that you eat from getting absorbed into your system. This blockage of calorie absorption makes them a great diet helper.
• Feel fuller faster: They can also help your diet by making you feel full. This is because they absorb 10 times their weight in water, forming a bulky gel.
• Hydration for athletes: They are also great for athletes because the “chia gel” can hydrate the body.
• Reduce your blood pressure: There’s evidence to suggest they can reduce blood pressure.
• Omega-3: They are the richest plant source of Omega-3 (the vital fats that protect against inflammation—such as arthritis—and heart disease). In fact, they contain more Omega-3 than salmon!
• Benefits for diabetes: Because chia seeds slow down how fast our bodies convert carbohydrates into simple sugars, studies indicate they can control blood sugar. This leads scientist to believe chia seeds may have great benefits for diabetics.

Chia seeds are easier to digest than flax seeds, and don’t need to be ground up. So why wait include chia seeds recipes in your diet and start your routine healthier way.

Mango Coconut Chia Pudding

Ingredients:

• 1 ½ cup Coconut Milk
• 1/3 cup Chia Seeds
• ½ tsp Vanilla Extract
• 1-2 tsp Honey
• 2 cup Ripe Mango Cubes

For Garnishing
• ¼ cup Chopped Strawberries
• 2-3 tbsp Chopped Dry Fruits (Almond, Pistachios and Cashew)
• ¼ cup Pomegranate Arils
• Dried Rose Petals (optional)

Method:

1. In sauce pan add chia seeds, coconut milk, vanilla extract and 1 tsp honey.
2. Mix it well and cook it on medium flame with stirring till it becomes thick like a pudding (kheer) consistency. Keep aside to cool down.
3. Now blend the mango cubes with 1 tsp honey and make a smooth puree.
4. Take 2 serving bowls. Add prepared chia pudding in it, then add prepared mango puree equally.
5. Garnish it with chopped strawberries, dry fruits, pomegranates, crushed few dry rose petals over it and place it into the refrigerator for 1-2 hrs to chill or use as it is.
6. Mango Coconut Chia Pudding bowl is ready to serve it and enjoy the healthy bowl of pudding.

Tips:

• Add dry fruits and fresh fruit over the pudding as per taste and choice
• You can add other fruits as well like banana, kiwi, oranges, apple or any berries.
